Chicken Thigh and Brown Rice Casserole with Zucchini

Chicken and rice casserole is healthy and delicious. This food is one of my favorites, and I’m sure if you try it you will like it. When I first tried it, I put in a lot of corn and it felt like a plain corn casserole. Make sure to adjust the corn accordingly while cooking, otherwise you may end up doing what I did.

INGREDIENTS

  • Zucchini, 2 medium. Cut them into ¼ slices

  • Chicken thighs, 4 are fine. Make sure they have no skin or bones.

  • Pepper and salt

  • Good quality brown rice, 1 cup. It must be precooked

  • Chicken bouillon cubes, 2 are good. Dissolve them in hot water (1 cup)

  • Garlic clove, 1. finely chopped

  • Corn kernels, ½ cup. You can choose fresh or canned, it’s up to you

  • Sauce, 1 cup.

INSTRUCTIONS

First, cook the chicken thighs by adding pepper and salt. Cook until chicken is browned. It will take 10-20 minutes.

Add the precooked chicken and rice broth, bouillon cubes, and minced garlic.

Cover properly and bring to a simmer. Make sure the heat is low. Cook the rice until the liquids from the chicken broth are absorbed.

Time to add zucchini, salsa, and corn kernels.

Simmer for a few more minutes or until the flavor is mixed and the zucchini is cooked through and crisp. Make sure the zucchini is not overcooked.

I would like to add information on brown rice. As you may already know, brown rice takes a long time to cook, so it can take time to absorb liquids. And that is why it is better to use precooked brown rice, it will completely absorb the liquids. By using precooked brown rice, you will reduce the time it takes to cook this recipe. One more thing, minced garlic clover was added for flavor, but if you’d rather not use it, you can leave it. Corn is one of the options that you can adjust accordingly. If you don’t like corn, removing it won’t affect the recipe much, but I recommend using all of the ingredients mentioned above.
