You will never guess the facts. It was better known as ‘Chili Con Queso’. Yes, now it sounds familiar. While it was formally called a white cheese dip, many menus refer to it as Chili Con Queso and it’s not as dark as you might think. In fact, it appears on most Mexican menus today. Preparation: 1 cup grated Asadero cheese or Monterey Jack cheese
4 ounces minced jalapeƱos OR 4 oz poblanos deveined and julienned
1/4 cup ‘half and half’
For newbies, half and half means a mixture of half milk and half cream. Therefore, it has 10-12% milk fat and cannot be churned.

2 tablespoons finely chopped onion
2 teaspoons ground cumin
1/2 teaspoon salt
4 ounces of green chiles.
